you can create encripted disc partition (using true crypt for example) and safety edit files there

No, AES Crypt is a tool that has one function: encrypt files. It cannot be used to create encrypted volumes or to encrypt an entire disk. For that, you should use True Crypt, since that's what that tool was designed to do.
